It's not necessary that a non-Muslim must convert to Islam if he wants to take a Muslim "wife".
Just don't get married.
Live in sin and have kids who will be neither Muslim nor non-Muslim.
They can't charge you for khalwat since you are non-Muslim. They can't charge her for khalwat since she can say in her defence that you are the father of her children.
Spread the word around and the whole system of imposing Islam on people will collapse.
